Pineapple Ice Cream
1 1/2 cups drained canned crushed pineapple in juice (from a 20-fl-oz can), reserving 1/2 cup plus 1 tablespoon juice
3/4 cup plus 2 tablespoons sugar
2 teaspoons cornstarch
1 1/4 cups whole milk
2 large egg yolks
1/4 teaspoon vanilla
1 cup chilled heavy cream

Bring pineapple, 1/2 cup reserved pineapple juice, and 1/2 cup sugar to a boil in a 2- to 3-quart heavy saucepan, stirring until sugar is dissolved. Reduce heat and simmer, stirring occasionally, until pineapple is softened, about 5 minutes. Stir together cornstarch and remaining tablespoon pineapple juice in a small bowl until cornstarch is dissolved, then add to pineapple mixture and simmer, stirring frequently, until thickened, about 1 minute.

Bring milk just to a boil in a 1 1/2- to 2-quart heavy saucepan. Whisk together yolks, remaining 1/4 cup plus 2 tablespoons sugar, and a large pinch of salt in a bowl, then add hot milk in a stream, whisking. Pour custard back into saucepan and cook over moderately low heat, stirring with a wooden spoon, until custard registers 170 to 175°F on thermometer, 2 to 3 minutes. Immediately pour custard through a very fine-mesh sieve into a bowl, then stir in pineapple mixture and vanilla and cool to room temperature, stirring occasionally. Stir in cream, then chill custard, covered, until very cold, about 4 hours.

Freeze custard in ice cream maker. Transfer ice cream to an airtight container and put in freezer to harden, at least 12 hours.

Drink Type: Cocktail

2 part(s) Tequila Reposado (more Tequila drinks)
2 part(s) Pineapple Juice (more Pineapple Juice drinks)
Pineapple foam (more Pineapple drinks)
1 pinch(es) Salt Maldon (more Salt drinks)
1 pinch(es) Pepper Aleppo (more Pepper drinks)

Shake and serve up in a margarita glass and garnish with a lime wheel.

Ham & Pesto Panini AND Ham & Mango Chutney Panini

Sourdough bread (or any other bread of your preference)
Sliced ham
Sliced Honey Crisp Apple
Swiss Cheese (or any cheese of your preference)
Spinach leaves
Dijon Mustard
Pesto spread (for sandwich #1)
Mango Chutney (for sandwich #2)
Earth Balance Soy Butter
Season with sea salt and ground pepper for taste, if needed.

Spread Pesto “or” Mango Chutney on one side of bread
On the second side of bread, please spread on some dijon mustard.
Place some sliced apple on one side then lay down the spinach leaves on other side.
Top either one of these side with sliced ham and cheese
Fold the bread altogether
Butter the top and bottom bread then place them in hot panini machine (George Foreman Grill, panini equipment, or any other methods are good).
Cook until surface of bread turns golden brown
Take the sandwich out of equipment and slice them in half.
Serve immediately.

Simple and Easy Chicken Casserole
4 chicken breast
season with sea salt and pepper
4 swiss cheese
a can of low sodium cream of chicken soup
1/4 cup of water
2 cups of bread crumbs by Pepperridge Farm
1/4 cup of melt butter, I’d recommend Earth Balance butter.


Lay the chicken breast in casserole pan. Season with sea salt and ground pepper. Lay a swiss cheese on each chicken. Mix cream of chicken with water then pour around the chicken. Sprinkle bread crumb evenly on the chicken. Sprinkle melt butter on top of bread crumb then bake.

Bake 45 minutes at 350 degree
